Try These Delicious Skin of Tofu Sausages With a Side of Fries

We had Yuba rolls for lunch today. These Vietnamese rolls are made with dried tofu skin, and stuffed with chicken and delicate spices.

They were slightly sweet and delicious.

Yuba is the top skimming of boiled soy milk. As soy milk is boiled, a film of light tofu is formed on the top of the pan and this is known as yuba. 

It reminds me of the skin on chocolate pudding from my childhood.

You could try to heat soy milk and scoop up the tofu film. This seems like an exercise in insanity so I wouldn’t recommend it.

It’s possible to buy Yuba sheets, sometimes called bean curd sheets, in the frozen section of your local Chinese grocery store.

Vegetarian Filling

They’re filled with chopped vegetables such as carrots and bamboo shoots. 

Here’s an example of fillings that may be included in your Yuba rolls. Be creative and invent new versions with what you have on hand.

• several tsp. sesame oil for cooking the filling

• carrots cut into matchsticks

• shiitake mushrooms, sliced

• thin green beans, diced

• julienned cabbage

• celery, diced

• bamboo shoots

• jicama, diced

Add the following, according to your taste:

• low-sodium soy sauce

• maple syrup

You’ll need these to create the rolls:

• frozen yuba sheets or bean curd sheets

• cornstarch

• canola oil
  

These rolls are sometimes referred to as a Vegetarian Goose dish because they are similar to a dish from Shanghai with that name. 

In Buddhist cooking, they call these rolls Neutralized Duck because they have the taste and texture of roasted duck.

Either way, they’re delicious.

Most spring rolls are made with rice wrappers (bánh tráng) and deep fried. These are different from Yuba rolls because of their wrapping.

When you purchase bean curd sheets, they may be quite large as they make the Yuba with large vats of tofu. Sometimes they come in large round circles and sometimes they’re half-moon shapes.

Sometimes the frozen ones are hard to get so you might need to use dried ones. When you unwrap the sheets, they feel like dried leather. They are so large, you might want to work with one at a time. Re-fold the others and return them to airtight packaging.

Cut them into smaller sheets that are approximately 8 x 8, as they will be easier to handle. 

 Place a couple of tablespoons of filling at one end of the sheet and begin rolling. 

Use a cornstarch and water mixture as glue to seal them up.
